  • over here over there

forgot to mention i got this toy over the weekend. i thought it was a big rock of candy, you break it open to get the skull inside. i stuck my tongue to it...thought, hmmmph, this is flour-y. so then i start to crack it open and take a little chunk. pop it in my mouth. i mumble something about pink chalk and hear laughter from another room. i ate chalk. i thought it was sweet tart-like candy. oops

broke down and made zucchini bread. it was raining, the only time to be able to turn off a/c during this time of year until like november. after messing with a recipe and then doing it, i temporarily get recipes stuck in my head. threw the last of the granola and almost the rest of the golden raisins in it. was trying to finish the rest of my all-purpose and wheat flours, too.

ok, in one bowl put your 1 3/4 cup flour, 1tsp baking soda, 1/4 tsp baking powder, 1/2 tsp powdered cloves, 1/2 tsp cinnamon, 3/4 tsp salt (if using self-rising flour, omit baking soda and baking powder), mix.

in the another bowl: cream 1/3 cup shortening with 1  1/3 cup sugar. add 2 eggs, about 1 1/2 cups shredded zucchini (about one zucchini, if zucc small, you may need another), 1 tsp vanilla, 1/3 cup water, stir well.

add the flour mixture in 1/3rd (of the bowl) at a time. add some nuts (i like walnuts, 1/3 cup) and/or raisins (or other fruit, 1/3 cup) if desired. spray bottom only of pan.

350 degrees for almost an hour if not a tad longer than an hour. it made a big loaf, but i kept thinking it would burn, it totally didn't, came out perfect!!! i think this recipe would work well as a banana bread, pumpkin bread, and with applesauce, i am thinking applebread. this is very moist. i lined the pan with foil and sprayed the bottom. this sucker kept warm on the oven with another piece foil sealing it, for a couple hours. (which means s. finally got some fresh homemade bread)!

now i must hurry up and gett off-line cuz the counter top people should be calling for a delivery anytime!

  • mmmmmmmman that fresh bread was good

  • Mmmmmmm.... zucchini bread. I haven't had that in years. I should make some this summer.

Got your e-mail. Really am going to send back. I was lazy the other day. :o )

Yay on the counter top. Did you end up sugaring the zucc flowers for garnish?

  • nah, fresh out of egg white now...after making the bread. but, i guess my lazy butt needs to just try spraying some water and dusting with sugar and then freezing. i read it should be young female flowers, i think, that once the males get to big, they get tough...and that i am supposed to grab them right before they open.

  • That reminds me that my mom used to make some fantastic zucchini bread.  It was delicious.  I don't ever remember seeing her with a recipe in her hand.  I guess a lot of good things came fresh out of her head, and her oven.

  • Oh man, eating chalk past the age of 6 is just no good. But that's okay, we all have ate our fair share of odd substances...take me for example...glue, dirt, sand, bugs...yeah, i've even ate chalk before...thought they were candy cigarettes...this was at age 15 though...19 now, i think i've stopped.

  • LOL at the eating chalk.  No more computer time at work, I'm getting an office mate.  YUCK! Now I have to find things to do.  Did counter top boyfriend call yet?

  • well you can chaulk that one up to experience :~)
